Thanks to the mild weather in October, the courgettes, which look a little bit tired in September, have not given up yet, and keep producing fruits, although at a somewhat lower pace.
The yellow courgettes started producing fruits later, but seem to hang on longer as well. I love the yellow waxy species. These courgettes are smaller, but have different taste. The tough and waxy skin allows keeping them longer, provided that the fruits are undamaged. For dished like stir fries etc. it is better removing the skin, so that it doesn't spoil the dish.
A variety which is easy to get in Ireland and UK is "Goldrush". Strictly recommended. Another prolific bumper crop species is "Buckingham" (F1 hybrid).
